Sausage Stuffing Egg Bake

We ate our Thanksgiving leftovers pretty straight up this year - i.e. reheated and in their original form.  We skipped the mashed potatoes in lieu of a sweet potato gruyere gratin that reheated really nicely, and the massive amount of leftover turkey (turns out 12 pounds is too much for 3 people!) is still languishing in the fridge, destined for a pot pie if I'm ambitious or a cold sandwich if I'm not.

But I'm here to talk to you about baking eggs in your stuffing, no matter what type of stuffing you made.  Ours had sausage and butternut squash in it and it was glorious and we all ate seconds, if not thirds.  We only had enough left for one additional meal and it was the thing we were all most excited about eating a second time so on Friday morning we woke up, I tossed some eggs right into the pan (two per person) and baked them until they were done.  Done in the Egg World is a relative term; I like mine a lot runnier than Andy does, so I deferred to him on this one and cooked them solid.

I set the oven to 375 degrees and cooked them until the eggs were solid and in terms of a "recipe," I'm not even sure how long this was, but it might've been in the range of 35 minutes, because our oven tends to run a little bit low.

Here's the recipe, in case you need a recipe, but this is actually so good you should think about making up some stuffing for non-Thanksgiving purposes.

Sausage Stuffing Egg Bake

stuffing (one serving per person)

eggs (two per person)

  1. Preheat oven to 375 degrees.
  2. Arrange stuffing in baking dish with indentations in which to drop eggs.  I used this enamel pan from Food52 that we recently received as a wedding gift and I could not be more excited to own this multipurpose dish.
  3. Crack eggs into the stuffing.  Crack them into some indentations or be lazy and don't.
  4. Insert dish into oven.  Determine how solid you want your eggs to be and set a timer accordingly (from 20 - 30 minutes recommended to start), but keep your eye on it!
  5. Divide into bowls immediately or eat straight up with a fork.  Realize stuffing is amazing and should be consumed more often.
